Ingredients
- 2 cloves Garlic peeled and chopped
- 2 cups Onion rough chopped
- 6 cups Chopped Broccoli including stalks rough copped
- 1 cup Small broccoli florettes
- 1/4 cup olive oli
- 1 tbsp Salt
- 1 tbsp ground black pepper
- 1/4 tsp cayanne pepper
- 1 tbsp cumin
- 8 cups chicken broth
Instructions
- 1) Add Olive Oil, onions, and garlic to heavy soup pot, and saute until onions start to brown.
- 2) Add broccoli, half the salt, to pot and continue saute for about 5 minutes.
- 3) Add chicken stock, bring to a boil, then reduce heat and let simmer until broccoli is tender.
- 4) With an emersion blender, blend until smooth, add cumin, and adjust seasoning to taste.
